Houjicha Roasted Green are Bancha green tea stems and larger leaves. Roasted to give a nutty flavor and aroma. Bancha is harvested when new shoots and leaf buds grow after the first picking for Sencha. Bancha is a more astringent and less fragrant tea. Accompanies a heavier meal very well.
Green teas are also from the camellia sinensis bush just like black tea; however the leaves are not fermented. The leaves are roasted, rolled and then fired. Roasting kills off the enzymes responsible for oxidation and the heat makes the leaves soft and flexible ready for various shapes.
